A tenderloin skewer (marinated with garlic, rosemary, ground fennel, coriander, and black pepper) is grilled and served over roasted eggplant puree (roasted garlic, olive oil, sherry vinegar). The baby carrots are pan roasted with cumin, black mustard seed, ginger, and shallots.
